Recipe
Preparation the day before:
- Peel the shallot and chop very finely. Roughly chop the oyster mushrooms.
Preparing the mustard:
- Chop the tarragon very finely and mix it with the mustards and fromage blanc.
To serve:
- Quickly fry the mushrooms and shallots in the butter.
- Season.
- Slice the chicken breast.
- On each cracker, spread a thin layer of the mustard mixture, the fried mushrooms and a few rocket leaves.
- Lastly, pile a few slices of chicken on each cracker.
An original recipe for this finely sliced, textured chicken. Take a Ryvita-style crispy cracker, spread it thinly with a mixture of mustard and fromage blanc, sprinkle on some oyster mushrooms gently fried with shallots and top with the chicken...an original, subtle and balanced snack.
