Chicken Breast Crackers with oyster mushrooms, rocket and grainy mustard

Ingredients

For 4

  • 1 Cooked Chicken Breast

For the oyster mushrooms:

  • 200g fresh oyster mushrooms
  • 50g salted butter
  • 1 fresh shallot
  • Unrefined salt
  • Freshly milled pepper

For the mustard:

  • 100g no-fat fromage blanc
  • 50g grainy mustard
  • 30g Dijon mustard
  • 10g tarragon leaves
  • 10g rocket

Recipe

Preparation the day before:

  • Peel the shallot and chop very finely. Roughly chop the oyster mushrooms.

Preparing the mustard:

  • Chop the tarragon very finely and mix it with the mustards and fromage blanc.

To serve:

  • Quickly fry the mushrooms and shallots in the butter.
  • Season.
  • Slice the chicken breast.
  • On each cracker, spread a thin layer of the mustard mixture, the fried mushrooms and a few rocket leaves.
  • Lastly, pile a few slices of chicken on each cracker.
