- To make the salsa sauce, carefully mix the sweetcorn, avocado cubes, garlic, lemon juice and olive oïl in a bowl with a pinch of paprika, salt and ground black pepper
- Wrap the tortillas in tin foil and heat in the oven at 150°c for 10-15mins
- Spread the confit duck over the tortillas. Garnish with the salsa, radish slices, sour cream and fresh coriander

This recipe takes us on a journey. Like a Mexican tamale, we combine a little duck with avocado and other ingredients and wrap them all up in a wheat tortilla. For more authenticity, try a corn tortilla instead.
